Blueberry pie with Brändle rapeseed oil

Makes 12 pieces

Ingredients

150 ml Brändle Vita rapeseed oil
150 g sugar
1 sachet vanilla sugar
1 pinch salt
Juice of half a lemon
4 eggs
200 g wheat flour
100 g cornflour
3 tsp baking powder
1/2 tsp cinnamon
250 g medicinal berries

Preparation

  1. Mix canola oil, sugar, vanilla sugar, salt and lemon juice in a bowl until well blended
  2. Add the eggs and stir in. Mix flour with cornstarch, baking powder and cinnamon.
  3. Gradually add the flour to the egg mixture. Mix everything well.
  4. Spread the mixture on a baking sheet lined with baking paper.
  5. Wash the blueberries, drain well on a colander. Cover the cake with the blueberries and bake in a preheated oven at 180-190 °C for 30-35 minutes.
